Baklava with Whipped Egg Whites

Ingredients

  • Whole egg - 4 pieces
  • Butter - 10.6 oz
  • Activated Baking Soda - ½ teaspoon
  • Sour Cream - 7.4 oz
  • Wheat Flour - 15.9 oz
  • Walnuts - 2 cups
  • Egg white - 4 pieces
  • Sugar - 14.1 oz

Step by Step guide

Step 1

Separate the egg whites from the yolks, leaving one yolk for greasing.

Step 2

Add three yolks to the softened butter. Mix half a teaspoon of baking soda with 200 grams of sour cream and add it to the butter, mixing with a mixer. Gradually add the flour and continue to beat. The dough may be sticky, but do not add more flour; it will rest in the refrigerator and stop being sticky.

Step 3

Divide the dough into three parts, making one larger (this will be the base), roll them into balls, and refrigerate for an hour.

Step 4

Prepare the nuts. Set aside about 20 grams of nuts (for decoration), and chop the remaining nuts finely.

Step 5

Whip the egg whites and gradually add the sugar. Whip until fluffy, but not to meringue consistency.

Step 6

Take the largest piece of dough from the refrigerator, keeping the other pieces cold. To make it easier to work with, roll out the dough on parchment paper. Roll the dough thinly and slightly larger than the baking tray. Transfer it directly on the paper to the tray. Spread half of the whipped egg whites evenly and sprinkle with half of the nuts.

Step 7

Roll out the second ball of dough on the paper, this time to fit the size of the tray, and cover the first layer. Spread the remaining cream and sprinkle with nuts. Roll out the third ball and cover the other layers, pressing the edges with a fork.

Step 8

Mix the remaining yolk with a tablespoon of sour cream and brush the baklava. Use a sharp knife to make careful cuts on the top layer (do not cut through the bottom layers, just mark the future squares). Decorate the top with walnuts.

Step 9

Bake in a preheated oven at 356°F for 35–40 minutes. The baklava will start to puff up, which is normal.

Step 10

Allow the baklava to cool and then cut into pieces.
