Ingredients
- Butter - 3.5 oz
- Salt - 1 teaspoon
- Salad Potatoes - 2 lbs
- Homemade Cheese - 2 lbs
- Activated Baking Soda - a pinch
- Ayran - 17 fl oz
- Wheat Flour - 4½ cups
Step by Step guide
Step 1
Boil the potatoes. Prepare the filling by mashing them with the homemade cheese that has been passed through a meat grinder.
Step 2
Knead the dough from the flour and ayran, which can be replaced with a mixture of yogurt and water. Add baking soda and salt to taste. Let it rest for half an hour.
Step 3
Form the dough into balls — about 12 pieces. Stretch them into flatbreads and place the filling on top.
Step 4
Pull the edges of the dough up to form balls. Then carefully roll them out into pancakes about half a centimeter thick, trying not to tear the dough.
Step 5
Bake the khychins on a thick-bottomed well-heated skillet without oil. If they start to puff up, pierce them with a knife.
Step 6
Brush the finished khychins with melted butter and serve immediately.
