Ingredients
- Farm fresh eggs - 2 pieces
- Vanilla extract - 1 teaspoon
- Almond - 1 teaspoon
- Wheat Flour - 10.6 oz
- Baking Powder - 1 teaspoon
- Salt - ¼ teaspoon
- Salted Butter - 4.1 oz
- Sugar - 3.5 oz
- Bananas - 4 pieces
- Walnuts - 2.6 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a loaf pan (designed for 1 kg) with butter and line it with parchment paper.
Step 2
Beat the eggs in a bowl along with the vanilla and almond extracts. Sift the flour into a mixing bowl, add the baking powder and salt.
Step 3
Mix the softened unsalted butter and sugar until light and fluffy, using a paddle attachment in a mixer on high speed. Switch to low speed and add the eggs. Beat until well combined. Turn off the mixer.
Step 4
Add the mashed bananas (preferably overripe), then gradually add the sifted dry ingredients along with the chopped walnuts, one third at a time. Mix until just combined. Pour the mixture into the loaf pan and place it on a baking sheet. Bake in the center of the oven for 55 minutes, until the bread is firm to the touch but moist inside.
Step 5
Let it cool in the pan for 15 minutes, then turn the bread out onto a wire rack and remove the parchment paper. Allow to cool, then slice and serve.
