Banana Bread with Ginger and Brazil Nuts
Ingredients
- Bananas - 3 pieces
- Wheat Flour - 2 cups
- Brazil Nuts - 1 cup
- Sugar - 8.8 oz
- Butter - 4.2 oz
- Farm fresh eggs - 2 pieces
- Grated Ginger Root - 1 piece
- Baking Powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Ocean salt - ¼ teaspoon
Step by Step guide
Step 1
Toast the nuts in the oven for 15–20 minutes, then chop them in a blender.
Step 2
Mix the flour with the baking powder and salt.
Step 3
Peel the bananas and mash them with a fork into a puree.
Step 4
Melt the butter in a small saucepan.
Step 5
Whisk the melted butter with the cup of sugar, add the vanilla extract, eggs, nuts, and bananas.
Step 6
Gradually add the flour and knead the dough.
Step 7
Preheat the oven to 180°C (350°F).
Step 8
Line a small deep baking dish with parchment paper and grease it with butter. Fill the dish with the dough and bake in the preheated oven for 15 minutes.

Peel the ginger root and grate it finely — you should get 1 tablespoon.

Mix the remaining sugar with the ginger, sprinkle it over the banana bread, and bake for another 15–20 minutes until done.

Wrap the cooled bread in plastic wrap and leave it for at least 1 hour.
