- Bananas - 2 pieces
- Milk - 2 fl oz
- Honey - 3 oz
- Coconut Milk - 2 fl oz
- Farm fresh eggs - 2 pieces
- Vanilla extract - 1 teaspoon
- Wheat Flour - 6.3 oz
- Baking Powder - 1 teaspoon
- Salt - ½ teaspoon
- Desiccated coconut - 0.9 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a 22 cm loaf pan with coconut or any vegetable oil.
Step 2
In a large bowl, mash the bananas with a fork.
Step 3
Add the milk, honey, melted coconut oil, eggs, and vanilla extract, and mix thoroughly until smooth.
Step 4
In a separate bowl, combine the flour, baking powder, and salt.
Step 5
Mix the dry ingredients with the wet ingredients and gently combine.
Step 6
It is important to mix everything until smooth, but do not overdo it: the less you mix the batter, the more tender the banana bread will be.
Step 7
Add the shredded coconut to the mixture and gently mix again.
Step 8
Pour the batter into the prepared pan and bake for 50–60 minutes. Check for doneness by inserting a toothpick into the center of the bread—it should come out dry.
Step 9
Let the bread cool in the pan for 10 minutes, then remove it and place it on a wire rack to cool completely.
