Ingredients

  • Bananas - 6 pieces
  • Walnuts - 3.5 oz
  • Butter - 4.4 oz
  • Farm fresh eggs - 2 pieces
  • Baking Powder - 2 teaspoons
  • Salt - a pinch
  • Ground Cinnamon - 1 teaspoon
  • Nutmeg - 1 teaspoon
  • Brown Sugar - 4.4 oz
  • Wheat Flour - 10.6 oz

Step by Step guide

Step 1

Preheat the oven to 338°F. Roast the walnuts on a baking sheet lined with parchment paper for no more than 5 minutes. The aroma will be amazing. Then remove the baking sheet with the walnuts and let them cool.

Step 2

Blend the butter and sugar in a processor until smooth and pale. Add the eggs one at a time.

Step 3

Mash the bananas with a fork or blender into a puree. Chop the walnuts finely.

Step 4

Add the bananas and walnuts to the butter mixture.

Step 5

Sift the flour, baking powder, baking soda, cinnamon, and salt into the mixture. Mix until just combined. Do not overbeat, just enough to combine all the ingredients.

Step 6

Bake in an olive oil greased pan for one hour. Check for doneness with a toothpick. When it comes out dry from the center of the bread, the loaf is ready.

Step 7

After baking, let it cool in the pan for 10–15 minutes, then remove and let it cool completely. It is highly advised not to cut the bread while it is hot, as it may crumble.
