- Bananas - 3 pieces
- Baking Powder - 0.2 oz
- Egg white - 3 pieces
- Cream 22% - 3 fl oz
- Wheat Flour - 10.6 oz
- Chopped almonds - 2.5 oz
- Mascarpone Cheese Unagrande - 8.8 oz
- Brown Sugar - 4.4 oz
- Powdered Sugar - 3.5 oz
Step by Step guide
Step 1
Mix room temperature butter with sugar and beat until fluffy and light. Mash the soft bananas and add them to the whipped butter. I used a potato masher for this — it's very convenient.
Step 2
Combine the whipped butter and banana puree, then sift the flour with baking powder into the bowl. It should result in a thick, homogeneous batter.
Step 3
Add the chopped almonds. By the way, you can also use hazelnuts or walnuts. In a separate bowl, whip the egg whites until stiff peaks form, then gradually add some sugar while continuing to whip to make the mixture firmer. Add about a quarter of the egg whites to the main batter, gently mixing to soften the batter. Then, using gentle folding motions from the bottom up, incorporate the remaining egg whites. It's best to do this with a wide spatula. Divide the resulting batter into muffin cups, filling them to the top. Bake the muffins at 356°F for 40–45 minutes.
Step 4
For the frosting, lightly whip the mascarpone at low speed, then gradually add the cream and powdered sugar. This results in a very delicate frosting that still holds its shape. It should be stored in a cool place and used to decorate only completely cooled muffins.
Step 5
Decorate the finished muffins with frosting and serve.
