Ingredients
- Farm fresh eggs - 3 pieces
- Milk - 5 fl oz
- Butter - 2 tablespoons
- Oat flakes - 13.2 oz
- Meyer Lemon Juice - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - 1 teaspoon
- Honey - 11.6 oz
- Activated Baking Soda - 1 teaspoon
- Fresh Berries - 11.3 oz
- Bananas - 2 pieces
Step by Step guide
Step 1
Cut the bananas into small pieces. Melt the butter. Blend everything (except for the honey and blueberries) in a blender on high speed for 2–3 minutes. Lightly grease a skillet with butter, and cook small pancakes over medium heat.
Step 2
Blueberry Syrup. In a saucepan, combine honey with 1 cup of blueberries and place over medium heat. Bring to a boil, stirring, and cook for 10–15 minutes. Reduce the heat and cook until thickened for another 5–10 minutes. Add the second cup of blueberries and remove from heat. Stir and let cool slightly. Serve warm over the pancakes.
