Ingredients

  • Butter - 8.8 oz
  • Brown Sugar - 4.4 oz
  • Vanilla extract - 1 teaspoon
  • Farm fresh eggs - 2 pieces
  • Bananas - 4 pieces
  • Milk - 4 fl oz
  • Activated Baking Soda - 1 teaspoon
  • Self-rising flour - 8.8 oz
  • Coconut flakes - 0.5 oz
  • Meyer Lemon Juice - 1 tablespoon
  • Powdered Sugar - 3.2 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Grease a round pie pan with butter and line it with parchment paper.

Step 2

Using a mixer, beat 125 g of softened butter and sugar until creamy. Add the lightly beaten eggs and mix again. Mash the bananas and add them to the batter along with the vanilla.

Step 3

Transfer the mixture to a large bowl. Combine the baking soda and milk. Using a metal spoon, mix the sifted flour and milk mixture. Combine all ingredients and knead well. Transfer to the prepared pan and smooth the surface. Bake for 1 hour until done. Leave in the pan to cool for 10 minutes, then transfer to a serving plate.

Step 4

For the glaze, beat the remaining butter, powdered sugar, and lemon juice with a mixer until creamy. Spread the mixture over the cooled pie and sprinkle with coconut flakes.
