Ingredients
- Baking Powder - 1 teaspoon
- Dates - 7.8 oz
- Butter - 7.1 oz
- Activated Baking Soda - 1 teaspoon
- Wheat Flour - 6 oz
- Ground Cinnamon - a pinch
- Farm fresh eggs - 2 pieces
- Cocoa Powder - 2 tablespoons
- Natural Yogurt - 0.1 oz
- Raw cane sugar - 7.1 oz
- Bananas - 1 piece
- 33% Cream - 4 fl oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Place the dates in a pot, add baking soda and 200 ml of boiling water, let it sit for 2 minutes, then drain the water.
Step 3
Blend the dates in a processor until they form a thick paste.
Step 4
Using a wooden spoon, beat the butter (85 grams) with the sugar (85 grams) until fluffy, then add the eggs, flour, cinnamon, and cocoa.
Step 5
Add the yogurt and blended dates to the mixture.
Step 6
Pour the resulting batter into a greased baking dish with high sides.
Step 7
Place banana slices on top and gently press them into the batter.
Step 8
Bake for 35 minutes.
Step 9
For the sauce: in a saucepan, combine the remaining butter and sugar (115 grams each) and cream over low heat, stirring constantly until the sugar dissolves and the sauce thickens and turns brown.
Step 10
Serve the finished pudding on a plate and drizzle with caramel sauce.
