Ingredients
- Butter - 4.2 oz
- Bananas - 2 pieces
- Baking Powder - 1 tablespoon
- Farm fresh eggs - 5 pieces
- Wheat Flour - 14.1 oz
- Powdered Sugar - 3 tablespoons
- Oranges - 3 pieces
- Salt - to taste
- Sugar - 5.3 oz
Step by Step guide
Step 1
Mix the flour, salt, baking powder, and powdered sugar. Add the softened butter (80 g) cut into pieces. Rub the butter into the mixture until it resembles crumbs.
Step 2
Make banana puree. Beat the eggs (2), then add the puree and beat again. Pour in the milk. Gradually add the flour mixture and knead the dough. The dough should be soft.
Step 3
Roll out to a thickness of 2–3 cm. Cut out circles.
Step 4
Preheat the oven to 392°F. Grease a baking sheet with butter, line it with parchment paper, and grease it again. Place the dough on the sheet. Mix the milk with the butter and brush it over the dough, then bake in the oven for 20 minutes.

For the curd, prepare the oranges. Zest two of them and mix the zest with sugar. Squeeze the juice from the oranges, pour it into the sugar, and mix.
Step 6
Beat the eggs and gradually pour them into the mixture.
Step 7
After 30 minutes, strain the mixture. Transfer it to a saucepan, add the butter, and cook until thickened.
Step 8
Pour into jars and refrigerate.
Step 9
Cut the finished scones in half and spread the orange curd inside.
