Barozzi Cake
Ingredients
- Chopped almonds - 3.5 oz
- Liquid dark chocolate - 10.6 oz
- Farm fresh eggs - 4 pieces
- Sugar - 1½ cups
- Ground Coffee - 1.8 oz
- Sugar Glaze - 1 tablespoon
- Powdered Sugar - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F. Place the peeled almonds in the oven for 4 minutes. After that, grind them or chop very finely.
Step 2
Melt the chocolate in a water bath.
Step 3
Beat the egg yolks with the sugar. Add the ground almonds, chocolate, coffee, and confectioners' sugar.
Step 4
In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the chocolate mixture with a spatula.
Step 5
Pour the mixture into a greased small diameter baking pan. Preheat the oven to 329°F and bake the cake for 45–50 minutes. Be sure to let it cool. Dust with powdered sugar. Optionally, you can decorate with berries.
