Basbousa Cake
Ingredients
- Wheat Flour - 1 cup
- Sugar - 2 cups
- Desiccated coconut - 1 cup
- Vegetable Oil - 1 cup
- Egg white - 1 piece
- Baking Powder - 2 teaspoons
- Vanilla salt - 2 teaspoons
- Semolina - 1 cup
- Nuts - to taste
- Meyer Lemon Juice - 2 tablespoons
- Water - 4 fl oz
- 1% Kefir - 1 cup
- Chocolate - to taste
- Raisins - to taste
Step by Step guide
Step 1
Soak the semolina in kefir and let it sit for 10 minutes.
Step 2
In a bowl, mix all the dry ingredients (1 cup of sugar).
Step 3
Add the dry mixture to the kefir-semolina mixture, stirring thoroughly while gradually pouring in the oil.
Step 4
Beat the egg until frothy and incorporate it into the batter.
Step 5
Line a baking dish with parchment paper and pour in the batter. Visually divide the batter into diamonds or squares, placing a nut (raisin, piece of chocolate, etc.) in each square.
Step 6
Place in a preheated oven for 35 minutes (depending on the oven) at a temperature of 356°F.
Step 7
Meanwhile, prepare the syrup. Mix water and 1 cup of sugar. Boil for 5–6 minutes. At the end, add 2 tablespoons of lemon juice and lemon peels.
Step 8
While the cake is still hot, cut it into small diamonds or squares. Pour the syrup over the top and into the cuts. Allow to cool.
