Ingredients
- Garlic - 2 cloves
- Tomatoes - 7.1 oz

- Olive Oil - 7 fl oz
- Bouquet Garni - 1 bunch
- Onion - 7.1 oz
- Ground Black Pepper - to taste
- Pork Skewers - 1 piece
- Bone marrow bones - 2 pieces
- Cooked Ham - 3.5 oz
- Mignonette pepper blend - to taste
- Flower Salt - to taste
- Chicken Egg - 12 pieces

Step by Step guide
Step 1
Rinse and chop the onion, cut the large basil leaves, and set aside the small ones. Dip the pepper in olive oil heated to 356°F for a few minutes, then peel off the skin and slice it into strips. Peel the tomatoes, remove the seeds, and also slice them into strips.
Step 2
Melt the bone marrow in a saucepan with a small amount of olive oil. Add the onion and pepper to the saucepan, sauté them, then add the shank, tomatoes, bouquet garni, and garlic. Cook uncovered over low heat until the moisture evaporates from the vegetables.
Step 3
Remove the shank, bouquet garni, and garlic. Add the sliced ham and chopped basil. Season the prepared garnish with salt and pepper to taste, then let it cool.
Step 4
Separate the yolks from the whites, lightly beat the whites, strain through a chinois, sprinkle with flower salt, season with freshly ground pepper, mix with the garnish, and sauté while beating and stirring with a fork.
Step 5
Then stop stirring, allow the omelette to brown slightly, and cook it on the other side.
Step 6
Brush the finished omelet with olive oil. Garnish each portion with three raw egg yolks and basil, sprinkle with fleur de sel, and season with minced pepper.
