Beaucaire Bread (Pain facon Beaucaire)
Ingredients
- Wheat Flour - 17.6 oz
- Water - 12 fl oz
- Salt - to taste
- Coarse Cornmeal - 1 tablespoon
- Dry yeast - 0.4 oz
Step by Step guide
Step 1
Rub the yeast into the flour until a uniform crumb forms. Add salt, then water. Knead the dough for 2 - 3 minutes until it starts to come together into a ball. Let it rest for 1 hour.
Step 2
Place the dough on a surface and flatten it with your palms into a rectangle. Moisten the surface with water and sprinkle with cornmeal. Roll the dough lengthwise and seal the edge with water.
Step 3
Lay out a towel and generously sprinkle it with flour. Place the dough seam side down and sprinkle with flour. Cover with another towel and let it rest for 30 minutes.
Step 4
Cut the dough crosswise into strips 3 cm wide. Place the strips on a baking sheet on their side and gently open them like donuts. The hole should be narrow.
Step 5
Bake at 428°F for 10 – 12 minutes.
