- Beef Kidneys - 17.6 oz
- Green Apples - 2 pieces
- Onion - 1 head
- Paprika - 1 tablespoon
- Curry - ½ spoons
- Ground Black Pepper - to taste
- Salt - to taste
- Wheat Flour - to taste
- Vegetable Oil - to taste
Step by Step guide
Step 1
Slice the liver into portion-sized pieces, pound them gently through plastic wrap, coat them in flour, and fry in vegetable oil. Once one side is browned, season with salt and pepper, then flip (this will make the liver even more tender than if you salted it right away). Remove to a paper towel to absorb any excess oil.
Step 2
Slice the apples, peeling them if desired. Strain the oil used to fry the liver and use it to sauté the apples (it’s important to use this oil so they absorb the flavor of the liver), cooking over medium heat until soft, making sure they don’t fall apart.
Step 3
Remove the pan from heat, add the onion sliced into rings, season with salt, and add paprika and curry. Stir constantly and sauté until the bitterness dissipates and the onion starts to soften, yet still retains a slight crunch, almost to the point of being fully cooked. The onion will absorb the flavors of the roasted apple and liver juices.
Step 4
Arrange everything on a plate in this order: apples, liver, onion, and place it in the microwave for just 2-3 minutes (700W), or in the oven for 5-7 minutes at 347°F (transfer to a ceramic dish that is oven-safe). Remove and enjoy.
