Berry-Apricot Pudding
Ingredients
- Muscovado Sugar - 3 tablespoons
- Frozen black currant puree - 12.3 oz
- Pitted Wild Apricots - 6 pieces
- Black Currant Jam - 4 tablespoons
- Breadcrumbs - 1.8 oz
- Butter - 0.9 oz
- Vanilla Ice Cream - to taste
Step by Step guide
Step 1
Preheat the oven to 374°F. Mix the thawed berries with the peeled and sliced apricot wedges, sugar, and jam. Stir well.
Step 2
Place the berry-fruit mixture in a heatproof dish, flatten it out, and cover with foil. Bake for 20 minutes.
Step 3
To check if the fruits are cooked enough, you can pierce an apricot with the tip of a knife. As soon as the knife easily goes into the flesh, the dish can be removed.
Step 4
Mix the breadcrumbs with room temperature butter (it's better to do this by hand to turn the crumbs into a buttery breadcrumb mixture). Sprinkle over the berries and fruits, and bake for another 10–15 minutes, uncovered, until the surface is golden brown.
Step 5
Serve with vanilla ice cream or Greek yogurt.
