Ingredients

  • Wheat Flour - 7.1 oz
  • Butter - 4.4 oz
  • Ground Oats - 1.8 oz
  • Sugar - 8.1 oz
  • Vanilla salt - 0.1 oz
  • Oranges - 2 pieces
  • Lemon - 2 pieces
  • Red Grape Juice - 3 fl oz
  • Unsweetened cherry juice - 13 fl oz
  • Corn Starch - 1½ tablespoons
  • Ground clove - 2 pieces
  • Vanilla Pod - 1 piece
  • Cinnamon - 1 piece
  • Star anise - 1 piece
  • Water - 3 tablespoons
  • Fresh Berries - 17.6 oz

Step by Step guide

Step 1

First, mix the oats, flour, chopped butter, 1/3 of the sugar, and vanilla sugar. Zest the citrus (1/3) and add it to the dry mixture. Rub the mixture with your hands until it resembles crumbs.

Step 2

In a large pot, heat the sugar until caramelized: hold for 4-7 minutes over medium heat until golden. Then pour in the wine, bring to a boil, and keep on medium heat. Extract the seeds from the vanilla pod and add them to the pot. Add the cherry juice and cinnamon. Place the star anise and cloves in a tea infuser and immerse it in the liquid. Zest the citrus and add it to the pot.

Step 3

Preheat the oven to 356°F. Squeeze the juice from the citrus (1/2 lemon) and pour it into the pot. Bring to a boil and cook for about 10 minutes (the liquid volume should reduce by half). Remove the spices.

Step 4

Mix the cornstarch with water until smooth. Pour it into the pot while whisking. Remove from heat. Add the berries.

Step 5

Grease a baking dish with butter and spread the berry mixture on the bottom. Evenly distribute the flour mixture over the berries. Bake for 25-30 minutes at 356°F until golden brown.
