- Fresh Mint - to taste
- Sugar - 10.6 oz
- Gelatin - 1.4 oz
- Heavy cream - 10 fl oz
- Water - 17 fl oz
- Fresh Berries - 17.6 oz
Step by Step guide
Step 1
Soak the gelatin. Set aside a few berries, pour 500 ml of hot water over the remaining berries, add 200 grams of sugar, bring to a boil, turn off the heat, and leave on the stove.
Step 2
Whip the cream with 100 grams of sugar. Heat a third of the gelatin until dissolved and mix it into the cream. Whip, pour into molds in a thin layer, and refrigerate for 1.5 hours.
Step 3
Mix the remaining gelatin into the warm syrup with berries. Let it cool, pour over the cream in the molds, and refrigerate until set. Before serving, garnish with mint leaves.
