Ingredients
- Wheat Flour - 7.1 oz
- Butter - 3.5 oz
- Water - to taste
- Light Raisins, Seedless - 1.8 oz
- Red Currant - 1.8 oz
- Citrus Zest Mix - 1.1 oz
- Chopped almonds - 1.1 oz
- Light Raisins, Seedless - 1.8 oz
- Pork fat - 1.4 oz
- Apple - 5.6 oz
- Ground Nutmeg - 0.3 teaspoons
- Ground Cinnamon - a pinch
- Ground clove - a pinch
- Lemon - 0.3 pieces
- Oranges - 0.3 pieces
- Brandy - 1 fl oz
- Milk - to taste
- Chicken Egg - 1 piece
Step by Step guide
Step 1
In a bowl, mix both types of raisins, currants, citrus zests, finely chopped but unpeeled apples, pork fat, nutmeg, allspice, cinnamon, zest and juice from the orange and lemon, and brandy. Mix for a while, cover, and refrigerate for a few days.
Step 2
Sift the flour into a bowl and add finely chopped butter. Knead by hand until crumbly and gradually add water. Knead until the dough is soft and homogeneous.
Step 3
Preheat the oven to 392°F.
Step 4
Roll out the dough on a floured surface. Cut out several circles, or one large one. Place the dough into greased molds, fill with the filling, lightly brush the edges with milk, and cover with a second circle. Seal the edges. Brush the top with lightly beaten egg mixed with milk.
Step 5
Bake in the oven for about 20-25 minutes until golden brown.
Step 6
Cool, remove from molds, and serve with brandy butter.
