This recipe was shared with us by the head pastry chef of the restaurant Dine & Delight, Emily Smith.

Ingredients

  • Red Grape Juice - 13 fl oz
  • Honey - 1.8 oz
  • Fresh Berries - 5.3 oz
  • Agar-Agar - 1½ g

Step by Step guide

Step 1

Combine the juice and honey in a saucepan, gently heat, and add agar-agar. Bring to a boil and remove from heat.

Step 2

Slightly cool the juice and strain it if any foam has formed.

Step 3

Pour the juice into the molds, and add fruits and berries to taste.

Step 4

Refrigerate for 20–30 minutes.

Step 5

Once the jelly has set, it is ready to eat.
