Berry Muffins with White Chocolate
Ingredients
- Meyer Lemon Juice - 2 teaspoons
- Milk - 8 fl oz
- Vegetable Oil - 4 fl oz
- Egg white - 1 piece
- Wheat Flour - 9.2 oz
- Baking Powder - 3 teaspoons
- Salt - ¼ teaspoon
- Sugar - 0.5 oz
- White Chocolate - 7.1 oz
- Fresh Berries - 14.1 oz
Step by Step guide
Step 1
In one bowl, combine all the wet ingredients: lemon juice, oil, milk, and egg. Mix them well.
Step 2
Take the white chocolate and chop it into small pieces.
Step 3
In a second bowl, add the dry ingredients: flour, baking powder, salt, sugar, and chocolate. Set aside about half a cup of chocolate pieces for decoration. Mix the dry ingredients.
Step 4
Add the wet mixture to the dry ingredients. Gently mix. It's okay if there are small lumps; overmixing can make your muffins too tough.
Step 5
Fold in the berries. If using frozen fruit, do not thaw them before adding to the batter, or it may turn red.
Step 6
Carefully mix the batter with the berries.
Step 7
Line the muffin tins with paper and carefully fill them with batter to the top, so that during baking, the muffins form that wonderful dome. Top with pieces of white chocolate. If you don't have paper liners, grease the tins with any vegetable oil.
Step 8
Bake for 20–25 minutes at 356°F.
Step 9
When the muffins are golden brown and a toothpick inserted in the center comes out clean, remove the tray from the oven.
