Ingredients
- Meyer Lemon Juice - 2 teaspoons
- Milk - 8 fl oz
- Vegetable Oil - 4 fl oz
- Egg white - 1 piece
- Wheat Flour - 9.2 oz
- Baking Powder - 3 teaspoons
- Salt - ¼ teaspoon
- Sugar - 5.3 oz
- White Chocolate - 7.1 oz
- Fresh Berries - 14.1 oz
Step by Step guide
Step 1
Preparation: In a bowl, mix the lemon juice, oil, milk, and egg, and whisk everything until smooth. Break the white chocolate into pieces and mix it with the flour, baking powder, sugar, and salt. Now combine the wet and dry mixtures. Just be careful not to mix too vigorously, as it may result in tough dough.
Step 2
Add the berries to the batter! From this point on, mix very gently — the berries should not turn into mush. Pour the batter into the molds. Line each mold with paper (if you don't have any, grease with oil) and pour in the batter. Fill them to the top for nice, dome-shaped muffins.
Step 3
Bake for 20-25 minutes at 356°F.
