Description

You can make the pie with any seasonal berries, and in winter — with frozen ones, placing them in a saucepan without thawing them first. The berries you add to the berry mixture fresh should have a firm skin: these include blueberries, black currants, etc.

Ingredients

  • "Jubilee Cookies" - 4.9 oz
  • Cake crumbs - 4.9 oz
  • Marinated cherries - 1 cup
  • Strawberry - 1 cup
  • Raspberry leaves - 1 cup
  • Fresh Berries - 1 cup
  • Butter - 1.8 oz
  • Sugar - 1 cup
  • Corn Starch - 2 tablespoons

Prepare all the ingredients. Line the bottom of a springform pan (20 cm) with parchment paper.

Grind the cookies and breadcrumbs through a meat grinder or blend them into fine crumbs. You will need 1 and 3/4 cups for the pie base. Transfer the crumbs to a deep bowl.

Melt the butter, add 8 tablespoons of melted butter and 2 tablespoons of sugar to the crumbs, and mix. This is the dough.

Preheat the oven to 356°F (356 degrees Fahrenheit) in 'top/bottom' mode. Spread half of the dough on the bottom of the pan, distribute, compact, and smooth it with a spoon.

Spread the remaining dough along the edges and use a glass to form the sides, bake the pie base for 10–15 minutes.

Remove from the oven, do not take the base out of the pan, and let it cool in the pan.

Wash and dry the berries, pit the cherries, and remove the stems from the strawberries.

Place the berries in a saucepan, add sugar, bring to a boil, and simmer for 2–3 minutes until the sugar dissolves.

Mix 3 tablespoons of water with the cornstarch, stir well, and pour into the saucepan in a thin stream while constantly stirring, simmer for 1–2 minutes until thickened, then remove from heat.

Add the remaining cup of blueberries to the hot mixture and stir. Quickly transfer the mixture to the base, smoothing the top. The pie is ready. Leave the pie in the baking pan to cool completely, transfer to a plate, and refrigerate.
