Berry Pie with Three Types of Berries and Vanilla Ice Cream
Ingredients
- Sugar - 1⅒ cups
- Corn Starch - 3 tablespoons
- Tapioca - 2 tablespoons
- Salt - ¼ teaspoons
- Serviceberries - 20.1 oz
- Fresh Berries - 21.2 oz
- Raspberry leaves - 19 oz
- Puff Pastry - 17.6 oz
- Egg white - 1 piece
- Vanilla Ice Cream - to taste
Step by Step guide
Step 1
Preheat the oven to 446°F.
Step 2
In a large bowl, mix 1 cup of sugar, cornstarch, tapioca, salt, and the berries. Mix well.
Step 3
On a floured surface, roll out half of the pastry and place it in a round pie dish. Press down and trim the excess pastry, leaving the edges. Chill slightly.
Step 4
Roll out the remaining pastry and cut a circle slightly larger than the dish.
Step 5
Place the berries in the pastry-lined dish, level them out, and cover with the cut-out pastry circle. Seal the edges tightly. Make several slits on top of the pastry. Brush with lightly beaten egg and sprinkle with the remaining sugar.
Step 6
Bake in the hot oven for 15 minutes, then reduce the temperature to 374°F and bake for another 45 minutes until done and golden brown.
Step 7
Cool in the dish for 3 hours and serve with vanilla ice cream.
