Berry Pudding
Ingredients
- Blackcurrant liqueur - 5.3 oz
- Red Currant - 5.3 oz
- Serviceberries - 5.3 oz
- Raspberry leaves - 5.3 oz
- Strawberry - 7.1 oz
- Raw cane sugar - 4.4 oz
- White bread - 8 pieces
Step by Step guide
Step 1
Place all the berries, except for the strawberries, in a large pot with 125 ml of water and heat for 5 minutes. Add the strawberries and remove from heat. Add sugar to taste and let cool.
Step 2
Trim the crusts off the bread and line 6 small pudding molds. Cut 1 piece for the bottom of the mold and line the sides with strips. Pour a small amount of berry juice into a bowl and gently moisten one side of the bread before placing it in the mold. Place it with the wet side down.
Step 3
Fill the center of the molds with the berries and add a little juice. Cover with the remaining bread, wet side up. Cover with plastic wrap and place small plates on top. Weigh down the plates. Place on a baking sheet and refrigerate overnight.
Step 4
Before serving, turn the puddings out onto serving plates and drizzle with the remaining berry juice. Serve with cream.
