Berry Tart
Ingredients
- Wheat Flour - 7.1 oz
- Butter - 3.5 oz
- Whole egg - 2 pieces
- Chicken Egg - 3 pieces
- Vanilla Pod - 1 piece
- Sugar - 4 spoons
- Fresh Berries - 10.6 oz
- Sour Cream - 10.6 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Combine the softened butter with the flour until you achieve a crumbly texture. Simply rub the mixture between your hands for about 5 minutes.
Step 3
Add 2 egg yolks.
Step 4
Knead the dough with your hands. Gradually, you will be able to form it into a smooth ball. The shortcrust pastry should be uniform, so make sure to knead it well to avoid any lumps of flour or butter. If the dough crumbles and doesn't want to come together, add a tablespoon of cold water — this will speed up the process.
Step 5
Now, the dough base needs to be spread in the baking dish where you will bake the pie. You can do this in two ways: roll out the dough and then place it in the dish, or pinch off small pieces of dough and use them to line the dish.
Step 6
While you prepare the filling, place the dough base in the refrigerator for at least 20 minutes, or in the freezer for 10 minutes.
Step 7
I'll repeat — take any berry — raspberry, strawberry, blueberry. Even frozen ones — just like that — without thawing. As for fruits, whether fresh or frozen, they will work too.
Step 8
In a separate bowl, mix together the sour cream, eggs, sugar, and vanilla seeds (to extract the seeds, split the vanilla pod in half lengthwise and scrape them out with a sharp knife).
Step 9
Once the cookie crust has set in the refrigerator or freezer, remove it. Arrange the berries on top and pour the sour cream filling over them.
Step 10
Place in a preheated oven (to 392°F) and bake for 25–30 minutes. Be sure to keep an eye on it to prevent the shortcrust pastry from burning (if you notice it starting to burn, lower the oven temperature or move the tart to a lower rack).
Step 11
Allow the finished pie to cool completely.
Step 12
When serving, as I mentioned earlier, you can sprinkle with almond flakes, coconut (if you like), chopped nuts, or caramelized nuts (you can see here — I sprinkle the pie with caramelized nuts at the end).
