Description
If the dough does not crumble into crumbs before adding the egg mixture, add a little more butter. You can use the following berries: strawberries, raspberries, blackberries.

- Milk - 16 fl oz
- Sugar - 1.8 oz
- Wheat Flour - 5.6 oz
- Butter - 2.1 oz
- Whole egg - 1 piece
- Powdered Sugar - 0.5 oz
- Water - 2 fl oz
- Fresh Berries - 17.6 oz
Step by Step guide
Step 1
For the cream, you will need the first four ingredients. Heat the milk until it boils, then remove from heat and let it cool.
Step 2
Beat the egg yolks with sugar and flour. Gradually add the milk to the egg mixture while whisking. Place the mixture on the heat, bring to a boil, and simmer on low heat for 2 minutes while constantly stirring. The mixture should start to thicken. Transfer to a bowl and cool under plastic wrap.
Step 3
For the dough, mix the flour and butter (cut into cubes) with powdered sugar in a food processor until crumbly. In a small bowl, whisk the yolk with water. Pour the egg mixture into the dough while continuing to mix.
Step 4
Place the dough between two sheets of parchment paper and roll it out to a thickness of 3 mm. Line the tartlet molds or a baking dish with the dough, pricking the bottom with a fork. Chill and bake for 15 minutes. Cool in the mold for 5 minutes.
Step 5
Remove the tartlets and fill them with cream, then top with berries and sprinkle with powdered sugar.
