Berry Tiramisu
Ingredients
- Ladyfinger Cookies - 7.1 oz
- Farm fresh eggs - 3 pieces
- Egg white - 2 pieces
- Vanilla salt - 0.2 oz
- Sugar - 7.1 oz
- Cream - 13 fl oz
- Non-alcoholic sparkling wine - 3 fl oz
- Concentrated Cranberry Juice - 3 fl oz
- Fresh Berries - 12.3 oz
Step by Step guide
Step 1
In a water bath, whisk the eggs and yolks with sugar, then add the vanilla sugar. When the mixture becomes frothy and homogeneous (5–8 minutes), remove from the water bath and let it cool.
Step 2
Whip the cream until stiff peaks form and fold it into the egg mixture. Mix well with a mixer.
Step 3
Combine the cranberry juice with the sparkling wine and briefly dip the ladyfinger cookies into the mixture so they absorb some liquid but do not become soggy. Arrange them at the bottom of a loaf pan. Layer half of the berries on top and drizzle with cream. Repeat the layers. The last layer should be cream.
Step 4
Place the tiramisu in the refrigerator for 6 hours.
Step 5
Before serving, transfer the tiramisu to a serving platter. Serve well chilled.
Step 6
Wash the berries (strawberries, raspberries, red currants, blueberries, etc.), dry them, and remove the stems.
