Birch and Apple Juice Granita

Ingredients

  • Birch sap - 17 fl oz
  • Clear Apple Juice - 17 fl oz
  • Sugar - 7.1 oz
  • Honey - 2 tablespoons
  • Meyer Lemon Juice - 2 tablespoons
  • Vanilla Pod - 1 piece

Step by Step guide

Step 1

Strain the birch juice through cheesecloth and pour it into a jar. Add the freshly squeezed apple and lemon juices, sugar, and honey, and stir until the sugar is completely dissolved.

Step 2

Slice the vanilla pod in half lengthwise, scrape out the tiny black seeds, and add them to the juice along with the pod. Cover the jar and refrigerate overnight, then strain the juice again, pour it into a container, and place it in the freezer until set. Stir the granita every half hour until frozen.

Step 3

Before serving, fluff the granita with a fork, divide it into glasses, and drizzle with additional lemon or lime juice.
