Ingredients
- Egg white - 4 pieces
- Citric Acid - 0.4 oz
- Gelatin - 0.5 oz
- Water - ½ cup
- Condensed Milk - 5.6 oz
- Butter - 2.8 oz
- Sugar - 2.1 oz
- Vanillin - a pinch
- Liquid dark chocolate - 7.1 oz
Step by Step guide
Step 1
Soak gelatin in boiled cold water for 30–40 minutes.
Step 2
Heat the swollen gelatin with half of the sugar over medium heat until completely dissolved.
Step 3
Beat the chilled egg whites with citric acid until stiff peaks form.
Step 4
Gradually add the remaining sugar to the egg whites and continue beating until the sugar dissolves. With the mixer on low speed, slowly pour in the gelatin with sugar. Set aside for a while.
Step 5
Beat the room temperature butter with the condensed milk. On low mixer speed, incorporate this mixture into the egg whites and add the vanillin.
Step 6
Lightly grease the mold where the cakes will set with butter and dust with powdered sugar.
Step 7
Pour in the soufflé and refrigerate until fully set.
Step 8
This amount makes 11 cakes.
Step 9
Melt the chocolate in a water bath, pour it over the cakes, and let the chocolate set.
