Biscotti with Parmesan, Basil, and Pine Nuts
Ingredients
- Pistachios - ¾ cup
- Butter - 6 tablespoons
- Grated Pecorino Pepato Cheese - 2.1 oz
- Citrus Zest Mix - 1 teaspoon
- Farm fresh eggs - 2 pieces
- Milk - ¼ cup
- Wheat Flour - 2 cups
- Baking Powder - 2 teaspoons
- Fresh basil leaves - 2 teaspoons
Step by Step guide
Step 1
Spread the pine nuts on a baking sheet and place in an oven preheated to 347°F for 8-10 minutes.
Step 2
Mix the butter, Parmesan, basil, lemon zest, eggs, and milk. Lightly beat with a mixer until smooth.
Step 3
Combine the flour with the baking powder and pine nuts, then mix with the previously prepared mixture. Blend with a mixer on low speed until it forms a dough.
Step 4
Roll the dough into a rectangle approximately 60 cm long and 2 cm thick.
Step 5
Line a baking sheet with parchment paper, place the dough on it, and bake in an oven preheated to 320°F for 15 minutes.
Step 6
Remove the dough from the oven and cut it into slices about 2 cm wide (you should get about 30 pieces), then turn them over and return to the oven. Bake for about 40 minutes until the biscotti are dry.
Step 7
Cool and serve as an accompaniment to various soups.
