Black Currant Cake

Ingredients

  • Butter - 3.5 oz
  • Farm fresh eggs - 3 pieces
  • 10% cream - 3 fl oz
  • Sugar - 3.5 oz
  • Wheat Flour - 8.8 oz
  • Frozen black currant puree - 7.1 oz
  • Activated Baking Soda - ½ teaspoon

Step by Step guide

Step 1

Mix the eggs with the sugar.

Step 2

Beat the eggs and sugar until light and fluffy.

Step 3

Add melted butter, cream, and flour, and mix well. Add baking soda that has been reacted with vinegar. Mix everything well. Dust the currants (if using frozen, do not thaw) with flour.

Step 4

Add the currants to the batter and mix.

Step 5

Transfer the batter to a greased baking pan.

Step 6

Place the pan in an oven preheated to 356°F. Bake the cake for 1 hour.

Step 7

Let the finished cake cool in the pan.
