Black Forest Cake Ice Cream

Ingredients

  • 3.2% Milk - 8 fl oz
  • 10% cream - 7 fl oz
  • Sugar - 10.1 oz
  • Salt - a pinch
  • Corn Starch - 3 teaspoons
  • Semi-soft cream cheese - 1.8 oz
  • Liquid dark chocolate - 1.8 oz
  • Butter - 2 tablespoons
  • Chicken Egg - 1 piece
  • Cocoa Powder - 0.7 oz
  • Wheat Flour - 1.6 oz
  • Marinated cherries - 7.1 oz
  • Kirsch - 1 fl oz

Step by Step guide

Step 1

For the chocolate sponge, melt 30 grams of chocolate with the butter, then add 100 grams of sugar, a pinch of salt, the egg, sifted cocoa powder, and sifted flour. Mix until smooth. Transfer the mixture to a small baking dish lined with parchment paper and bake for 20 minutes at 347°F. Remove and let cool.

Step 2

For the glazed cherries, combine the pitted cherries, 100 grams of sugar, and kirsch in a small saucepan and cook until the berries are soft, about 10-15 minutes. Remove from heat and set aside until needed.

Step 3

Dissolve the cornstarch in 50 ml of milk.

Step 4

For the ice cream, in a small saucepan over medium heat, combine the cream, remaining milk, sugar, and salt. Stir and bring to almost a boil, then add the cornstarch milk and cook, stirring constantly, until thickened. Remove from heat, add the cream cheese, and mix until smooth. Cool to room temperature, then refrigerate overnight.

Step 5

Freeze in an ice cream maker according to the instructions, adding 20 grams of chocolate shavings, half of the prepared sponge cut into small, even cubes, and half of the glazed cherries. Transfer the finished ice cream to a container and freeze for at least 4 hours before serving.
