Black Forest Cherry Cake

Ingredients

  • Egg white - 6 pieces
  • Wheat Flour - 4.2 oz
  • Baking Powder - 1 teaspoon
  • Cocoa Powder - 3 tablespoons
  • Grated Chocolate - 2.1 oz
  • 10% cream - 20 fl oz
  • Cherry - 17.6 oz
  • Vanilla salt - 2 teaspoons
  • Powdered Sugar - 4.2 oz
  • Cherries in Liqueur - 4 tablespoons
  • Sugar - 3 tablespoons

Step by Step guide

Step 1

Separate the egg whites from the yolks. Whisk the yolks with sugar and 2 tablespoons of warm water.

Step 2

Whisk the egg whites separately until soft peaks form and gently fold them into the yolk mixture.

Step 3

Sift the flour with cocoa powder and baking powder. Fold into the egg mixture. Add the grated chocolate (originally, it was suggested to add 60 g of ground almonds, but I didn't have any, so I made it without).

Step 4

Pour the batter into a greased pan and bake at 180°C for about 30 minutes (check with a toothpick). Let the baked layer cool and cut it into 3 parts.

Step 5

Filling: pit the cherries, collect the juice, pour it into a saucepan, add sugar and cinnamon. Heat until the sugar dissolves, then add the alcohol.

Step 6

Soak the layers with the warm syrup.

Step 7

Whip the cream with sugar and vanilla.

Step 8

Assembly: place half of the cherries on the bottom layer, spread cream so that it fills the gaps between the cherries. Place the second layer and repeat the process.

Step 9

Spread the remaining cream on the sides and top, and decorate with chopped chocolate.

Step 10

According to the rules, the cake should be refrigerated for a couple of hours.
