Description
Black sesame paste can successfully be replaced with black sesame 'Urbech.' It is usually found at markets near honey and pine nuts, sold in glass jars.
Ingredients
- Milk - 6 fl oz
- Black Bean Paste - 2.1 oz
- Egg white - 2 pieces
- Sugar - 3.5 oz
- 10% cream - 4 fl oz
- Black sesame seeds - 0.5 oz
Step by Step guide
Step 1
In a large bowl, mix 60 g of sugar and the sesame paste.
Step 2
In another bowl, whisk the remaining sugar with the egg yolks.
Step 3
Heat the milk in a small saucepan, gradually pouring it into the yolk and sugar mixture to prevent the eggs from curdling.
Step 4
Pour the egg-milk mixture back into the saucepan, set it over low heat, and stir constantly until the mixture thickens.
Step 5
Strain the resulting custard through a sieve and gradually mix it with the sesame paste. Cool it down.
Step 6
Add the cold cream and sesame seeds to the cooled custard.
Step 7
Place the mixture in an ice cream mold and put it in the freezer. Stir every hour for 7–8 hours, using a mixer if possible. Leave it in the freezer overnight.
Step 8
Before serving, take it out 5–10 minutes in advance to let the ice cream soften slightly.
