- Semi-soft cream cheese - 23.3 oz
- Butter - 10.6 oz
- Powdered Sugar - 12 tablespoons
- Farm fresh eggs - 8 pieces
- Wheat Flour - 2 cups
- Sugar - 12 tablespoons
- Baking Powder - 2 teaspoons
- Cocoa Powder - 1 tablespoon
- Serviceberries - 10.6 oz
- Canned Pineapple Chunks - 6 pieces
- Walnuts - 2.8 oz
- Chocolate shavings - 0.9 oz
Step by Step guide
Step 1
Before starting to prepare the cake, place the cream cheese in the refrigerator and take the butter out of the refrigerator to reach room temperature (I left it out overnight).
Step 2
Prepare a regular sponge cake: first, beat 4 egg whites with 6 tablespoons of sugar until a white airy foam forms, then add the yolks to the mixture. Gradually add the flour while stirring the mixture, and add 2/3 teaspoon of baking powder.
Step 3
Prepare a chocolate sponge cake — do the same, but with the addition of cocoa: beat 4 egg whites, 6 tablespoons of sugar, and 1 tablespoon of cocoa, then add the flour and 2/3 teaspoon of baking powder.
Step 4
Grease the pan with sunflower oil and bake the layers alternately.
Step 5
When the layers cool, cut them into 2 parts (I only got 1 part from the chocolate sponge cake). Trim the edges from all sides of the sponge cake.
Step 6
Prepare the cream in portions: 1 portion for one sponge cake layer, specifically 220 grams of cream cheese, 100 grams of butter, and 4 tablespoons of powdered sugar. Make a total of 3 portions of cream. The last one should include blackberry puree (100 grams).
Step 7
Assemble the cake: the bottom layer is the regular sponge cake, which can be lightly soaked with pineapple juice from the can, spread cream on top, followed by canned pineapples and walnuts.
Step 8
The second layer is the chocolate sponge cake, which can be soaked more thoroughly, topped with cream, pineapples, and nuts.
Step 9
The third layer is the regular sponge cake, soak it and cover the entire cake with blackberry cream.
Step 10
Decorate with chocolate shavings and blackberries.
