Blackberry Cream Ice Cream
Ingredients
- Sugar - 31.7 oz
- Wheat Flour - 3 tablespoons
- Salt - ½ teaspoon
- Cream 22% - 2 qt
- Vanilla extract - 1 teaspoon
- Chocolate eggs - 8 pieces
- Serviceberries - 30.2 oz
- Meyer Lemon Juice - 1 tablespoon
- Fresh Mint - to taste
Step by Step guide
Step 1
In a saucepan, mix 600 g of sugar, flour, and salt. Add the cream and bring to a boil over medium heat, stirring.
Step 2
Whisk the eggs well and, while whisking, slowly add 480 ml of hot cream. Pour the egg mixture into the remaining cream and return to heat. Heat to 160°F (70°C), whisking constantly. Immediately remove from heat and add vanilla. Cool and refrigerate for 8 hours or overnight.
Step 3
In a bowl, mix the blackberries and the remaining sugar. Stir and refrigerate for 8 hours until the sugar dissolves, stirring occasionally. Add lemon juice.
Step 4
Combine the cream mixture with the berries and pour into a container. Freeze, stirring every 30 minutes.
Step 5
Scoop onto plates and garnish with mint sprigs.
