Description
Blackberry Pie
Ingredients
- Wheat Flour - 19.4 oz
- Butter - 8.8 oz
- Salt - ½ g
- Chocolate eggs - 5 pieces
- Water - 1 cup
- Shortbread Cookies - 8 pieces
- Frozen black currant puree - 7.1 oz
- Milk - 17 fl oz
- Sugar - 7.1 oz
- Vanillin - 0 oz
- Chocolate shavings - 0.7 oz
Step by Step guide
Step 1
First, we make the base, which will be exactly like a sponge cake. Sift 500 g of flour and mix the salt with the cold butter, cutting it into fine crumbs with a sharp knife. Beat one egg, add water, and beat again. Pour the mixture into the dough and knead well, then transfer it to a baking dish and set aside for now.
Step 2
Take the blackberries out, thaw them, then rinse under cold water, gently squeeze them to remove excess juice, and place them on top of our dough.
Step 3
Take 4 pieces of shortbread cookies and crush them by hand directly over the blackberries, distributing them evenly across the layer.
Step 4
Now we need to make the custard. Heat the milk over low heat until it boils. In a separate bowl, beat the yolks (4 pieces) with sugar, vanillin, and flour (50 g). While constantly stirring the yolks, gradually pour in the warm milk, then place our yolk-milk mixture over medium heat and bring to a boil. To thicken the custard, simmer it (reducing the heat) for about 5 to 10 minutes until thickened, then let it cool. Once the custard has cooled, spread it as the next layer over the cookie crumbs.
Step 5
Break the remaining 4 pieces of cookies over the custard, distribute them evenly, and place it in the oven to bake. Bake for about 30 minutes, and before serving, you can sprinkle with chocolate shavings.
