Ingredients
- Wheat Flour - 5.3 oz
- Chopped almonds - 1.8 oz
- Chicken Egg - 1 piece
- Milk - 4 fl oz
- Baking Powder - 1 teaspoon
- Vegetable Oil - 1 fl oz
- Activated Baking Soda - ½ teaspoon
- Sugar - 3.5 oz
- Blackcurrant liqueur - 1 cup
- Grated Chocolate - 5 tablespoons
- Orange zest - 2 tablespoons
- Honey - 4 tablespoons
- Orange juice concentrate - 5 tablespoons
Step by Step guide
Step 1
Mix all the dry ingredients, namely: flour, baking powder, almond flour, sugar, and baking soda. Stir well.
Step 2
In another bowl, mix the milk, oil, and egg.
Step 3
Combine the mixtures. Grate the lemon zest, add the grated chocolate, honey, and orange juice.
Step 4
Mix the batter. Add the blackcurrants. Don't worry if the berries start to bleed; it won't ruin the dish.
Step 5
Preheat the oven to 356°F.
Step 6
Pour the batter into portioned molds or a baking tray. Bake in the oven for 25–30 minutes. Check for readiness with a toothpick (the inside should not be liquid, but be careful not to overbake). Dust the warm muffins with powdered sugar.
