Description
Dark chocolate pairs perfectly with blackcurrants — drizzle the baked muffins with chocolate glaze. To do this, melt 40 g of chocolate and 40 g of butter in a double boiler.

- Wheat Flour - 11.3 oz
- Baking Powder - 2 teaspoons
- Salt - a pinch
- Farm fresh eggs - 2 pieces
- Activated Baking Soda - 1 teaspoon
- Kefir - 3 fl oz
- Sugar - 7.8 oz
- Butter - 2.1 oz
- Citrus Zest Mix - ½ teaspoon
- Blackcurrant liqueur - 7.1 oz
Step by Step guide
Step 1
Grease the muffin tins with butter and dust with flour.
Step 2
Lightly beaten eggs are mixed with kefir. While continuing to whisk, add sugar, lemon zest, and finally, melted butter.
Step 3
Combine flour, baking powder, baking soda, and salt. Add one-third to the egg mixture and mix with a spatula. Gradually add the remaining two parts of flour to the batter.
Step 4
Fold in the blackcurrants into the batter, being careful not to crush the berries.
Step 5
Fill the muffin tins with the batter. Place in an oven preheated to 392°F for 15–20 minutes.
