Description
Recipe taken from the book 'Taste Geography: Estonia' by John Smith.
Ingredients
- Wheat Flour - 9.7 oz
- Baking Powder - ½ teaspoon
- Marzipan - 2.3 oz
- Chocolate eggs - 3 pieces
- Butter - 6.7 oz
- Sugar - 6.2 oz
- Vanilla Pod - ½ piece
- Cream - 3 fl oz
- Blackcurrant liqueur - 21.2 oz
Step by Step guide
Step 1
For the dough: beat the grated marzipan with one egg. Mix the room temperature butter (120 g) with sugar (100 g). Combine the marzipan and the butter-sugar mixture, stir, and add 2 more eggs.
Step 2
Combine all dry ingredients (150 g of wheat flour, ½ teaspoon of baking powder, half a vanilla pod) for the dough. Sift through a sieve and gently fold into the dough using a spatula.
Step 3
For the crumble: mix sugar (50 g) with flour (125 g) and butter (70 g), rub into crumbs and add marzipan (25 g), grated on a coarse grater.
Step 4
In a greased and floured baking dish, spread the dough. Top with blackcurrants, sprinkle with a small amount of sugar. Then crumble the crumble mixture on top and place the pie in the oven (320°F) for 45–50 minutes — 'until a toothpick comes out clean.'
Step 5
For the cream topping: whip the cream with sugar (2 tablespoons) and decorate the pie with the resulting mixture.
