  • Blackberry - 7.1 oz
  • Sugar - 1.8 oz
  • Whole egg - 2 pieces
  • 10% cream - 10 fl oz
  • Meyer Lemon Juice - 1 fl oz

Whisk the egg yolks with sugar.

Step 2

Heat the cream to about 140°F (it should feel warm to the touch but not scalding) and gradually pour the cream into the mixture of egg yolks and sugar, whisking constantly until it thickens into a rich sauce. Stir in the lemon juice, drizzle the sauce over fresh berries, and serve immediately.
