Description

This recipe is taken from a book titled 'Sweet Recipes from a Popular Bakery in America.' This sticky sweet bread with blueberries is best enjoyed on the day it’s baked; it’s so delicious that you’ll hardly want to save any for the next day! The dough can also be used to make individual rolls instead of one loaf.

Ingredients

  • Milk - 10 fl oz
  • Sugar - 0.9 oz
  • Dry yeast - 1½ spoons
  • Wheat Flour - 17.6 oz
  • Butter - 5.1 oz
  • Brown Sugar - 3.5 oz
  • Blackberry - 7.1 oz
  • Chicken Egg - 1 piece
  • Salt - 1 tablespoon

Step by Step guide

Step 1

Grease the baking pan with butter and dust it with flour.

Step 2

Combine slightly warm milk, sugar, and yeast in a pitcher. Stir well and let it sit until foam appears – this will take about 20 minutes.

Step 3

In a large bowl, sift the flour and salt. Add the butter and rub it in with your fingers until it resembles coarse crumbs, with no large pieces of butter remaining. Make a well in the center and pour in the milk mixed with the yeast. Stir with a spoon until a dough forms.

Step 4

Transfer the dough to a lightly floured surface and knead until it reaches a smooth and soft consistency. Place the dough in a lightly floured large bowl, cover it with a towel or plastic wrap, and let it rise for about 45 minutes, or until it has doubled in size.

Step 5

When the dough has risen, remove it from the bowl and gently punch it down. Then, knead it a little and roll it out on a floured surface into a rectangle measuring 30 x 38 cm. Use a sharp knife to cut the dough lengthwise into four equal-width strips.

Step 6

Lightly brush each strip with softened butter. Sprinkle with light brown sugar, then add blueberries, gently pressing the berries into the dough. Carefully lift the strips of dough and stack them on top of each other, then cut into six equal squares. Gently lift each "tower" and place it in the baking dish cut side up—position each "tower" next to the previous one to fill the dish tightly. If any blueberries fall out during assembly, they can be added to the dough at this stage.

Step 7

Cover the dough with plastic wrap and let it rise in a warm place for 30 to 40 minutes, until it doubles in size.

Step 8

Preheat the oven to 338°F. Lightly brush the top of the risen dough with an egg and sprinkle with light brown sugar. Bake for 30-45 minutes, until golden brown. Allow to cool slightly and serve warm.
