Blueberry Cheesecake Ice Cream
Ingredients
- Sweetened Condensed Milk with Coffee - 10.6 oz
- Semi-soft cream cheese - 7.1 oz
- Crème fraîche - 5 fl oz
- Fresh Berries - 1½ cups
- Meyer Lemon Juice - 1 teaspoon
- Vanilla salt - ⅓ cup
- Shortbread Cookies - 1.8 oz
Step by Step guide
Step 1
In a deep saucepan, combine the cream cheese, sweetened condensed milk, and crème fraîche. Lightly beat the mixture, cover tightly with a lid, and refrigerate for 2–4 hours.
Step 2
Prepare the blueberry sauce. In a saucepan, combine the blueberries, ¼ cup of water, 1 teaspoon of lemon juice, ¼ cup of water, and ⅓ cup of sugar. Place over medium heat and bring to a boil. Reduce the heat and cook for another 10 minutes, stirring, until the syrup thickens. After the time is up, remove from heat and let cool. Transfer the sauce to a clean container until use.
Step 3
Place the shortbread cookies in a clean blender and crush them into crumbs. Transfer to a clean plate until use.
Step 4
After 2–4 hours, take the cheese mixture out of the refrigerator, pour it into an ice cream maker, and churn for 20–40 minutes. Fill the resulting mixture into an ice cream container.
Step 5
Fill the container halfway with ice cream. Randomly drizzle the blueberry sauce over the surface of the ice cream. Using the back of a wooden spoon, gently swirl the ice cream, drawing the number 8 with the spoon. Do not mix the ice cream and sauce into a homogeneous mass. The blueberry layer should not completely blend with the ice cream. Sprinkle a layer of crushed cookies on top of the ice cream. Repeat the same with the remaining ingredients, making a second layer of ice cream.
Step 6
Close the container and place it in the freezer for 4 hours before serving or further storage.
Step 7
If you do not have an ice cream maker, immediately transfer the ice cream mixture into a container, mix in the blueberry sauce and cookie crumbs, in this case, mix well and place in the freezer. Take the container out and stir the contents every half hour until set.
