Ingredients

  • Wheat Flour - 1½ cups
  • Butter - 6.3 oz
  • Baking Powder - a pinch
  • Vanillin - to taste
  • Semi-soft cream cheese - 17.6 oz
  • Chocolate eggs - 3 pieces
  • Marinated cherries - 5.8 oz
  • Fructose - 0.7 cups
  • Fresh Berries - 7.1 oz

Step by Step guide

Step 1

First, remove the pits from the cherries. This is easy to do by cutting the berries in half. Set them aside for now. Next, prepare the dough. Take the butter out of the refrigerator in advance so that it reaches room temperature, then cut it into small cubes. On the table, make a mound of flour, add the fructose from the cup, baking powder, and butter, and mix. Then pour in the egg and, as quickly as possible, knead the dough. It will stick to your hands, so it's good to have a bag of flour on hand. Periodically sprinkle flour on the table and your hands. Eventually, the dough will start to behave well, then roll it into a ball, cover it with a napkin, and put it in the refrigerator for about 30–40 minutes. This is just the right time to prepare the filling.

Step 2

In a deep bowl, dump all the cottage cheese. Separate the yolks from the whites. The yolks should be mashed with fructose, while the whites should be whipped well with a mixer (do everything in separate containers!!). Now add the yolks with fructose and a packet of vanillin to the cottage cheese, and only then add the whipped egg whites. Gently(!) mix everything with a fork until you get a homogeneous mass. The filling is ready.

Step 3

Grease a removable baking pan with butter so that nothing burns (I used a pan with a diameter of 26 cm). Next, roll out the dough right there to form both the base and the sides of the pie (first, pinch off a piece of dough the size of a plum — it will be useful later). Pour the cottage cheese filling and evenly distribute it over the base. Then lay out the cherries and blueberries. Now take the remaining piece of dough, tear it into small pieces, and sprinkle it over the center of the pie. This creates a crumbly topping.

Step 4

In my oven, the pie baked for about 40 minutes. I constantly adjusted the temperature, so I can't give an exact number. But ideally, if you set it to 392°F, everything will be ready in 20–25 minutes.
