Blueberry Cream

Ingredients

  • Fresh Berries - 17.6 oz
  • Sugar - 3.5 oz
  • Farm fresh eggs - 3 pieces
  • Gelatin - 0.7 oz
  • Lemon - 1 piece
  • Vanilla salt - ¼ teaspoon
  • Powdered Sugar - 3 tablespoons

Step by Step guide

Step 1

Add a little water, sugar, and lemon zest to the blueberries and bring to a boil. Then cool, add lemon juice (or citric acid), egg yolks, and dissolved gelatin.

Step 2

Soak the gelatin in 180 g of cold boiled water for swelling. After 1.5–2 hours, dissolve the swollen gelatin by heating.

Step 3

Pour the prepared cream into bowls. Once the cream has set, decorate with egg whites that have been whipped with powdered sugar.
