Description

Instead of blueberries, you can use any other berries or a mix of berries. Fruits (apples, plums, pears, apricots, etc.) should be finely chopped and soaked for 10-15 minutes in calvados, armagnac, fruit schnapps, grappa, etc.

  • Wheat Flour - 2 glasses
  • Brown Sugar - 1½ spoons
  • Sugar - 1 glass
  • Ground Cinnamon - ¾ spoons
  • Butter - 4.4 oz
  • Baking Powder - 1 tablespoon
  • Salt - ½ spoons
  • Activated Baking Soda - ¼ spoons
  • Sour Cream - 5 teaspoons
  • Vanilla extract - ¾ spoons
  • Blackberry - 17.6 oz
  • Chicken Egg - 1 piece

Step by Step guide

Step 1

Line the bottom of a square baking dish (25x25 cm) with a sheet of foil, allowing the ends to hang over the sides slightly (about 4-5 cm). Preheat the oven to 347°F.

Step 2

For the top layer of the pie, mix together flour (1 cup), brown sugar (1.5 tablespoons), granulated sugar (1.5 tablespoons), a pinch of salt, and cinnamon. Add diced butter (60 g) and rub it into the mixture with your hands until you achieve a uniform crumbly consistency. (A blender can be used.) Divide the mixture into two equal parts.

Step 3

For the bottom layer of the pie, in one bowl, mix the flour (1 cup), baking powder, baking soda, and salt (½ teaspoon) thoroughly with a spoon. In another bowl, combine the sour cream and vanilla extract. In a third bowl, use a mixer on medium-high speed to cream the butter (65 g) with the sugar until the mixture becomes airy (about 5 minutes). Add the egg and continue to beat until homogeneous. Then, combine the contents of all three bowls, alternating by adding the sour cream mixture and the egg mixture to the flour, mixing on low speed.

Step 4

When the dough is ready, add the blueberries and gently mix with a spoon or your hands, taking care not to damage the berries too much.

Step 5

Transfer the blueberry batter into a baking dish and smooth the surface with a spatula. Evenly sprinkle the previously prepared crumb mixture over the top of the pie.

Step 6

Place the pie in the oven on the middle rack and bake for 25 minutes.

Step 7

Remove the pie from the oven, sprinkle with the remaining crumb mixture, and return it to the oven. Bake until fully cooked (about 25 minutes).

Step 8

After taking it out of the oven, let the pie sit in the pan for 10 minutes. Once it has cooled slightly, carefully pull it out of the pan by the hanging edges of the foil.
