Ingredients

- Baking Powder - 1 tablespoon

- Milk - 3 fl oz
- Butter - 4.2 oz
- Vanilla salt - 2 spoons
- Blackberry - 5.3 oz
- Egg white - 3 pieces
- Sugar - 5.3 oz
Step by Step guide
Step 1
Take one large bowl (or a mixing bowl that is convenient for using a mixer) and add all the ingredients for the cupcake batter: flour, milk, egg whites (using only egg whites will make the batter much lighter), salt, baking powder, butter, sugar, vanilla sugar, and blueberries.
Step 2
While we're doing all this, preheat the oven to 392°F, so that by the time the dough is ready, it will already be heated and we can start cooking without delay.
Step 3
You can process the blueberries in a food processor, but be careful not to overdo it, so they don't turn to mush. Set aside a few whole blueberries for decoration.
Step 4
Mix all our ingredients in the bowl using a mixer. Combine 3 egg whites and another 150 grams of sugar along with a tablespoon of vanilla for the meringue, which we will prepare a little later.
Step 5
Now take the baking molds; if they are silicone, there's no need to grease them. Even if they are Teflon or metal, greasing isn't necessary since there's already oil in the batter. You can lightly grease the bottom of the molds to prevent the cupcakes from sticking and to ensure they come out easily when we take them out of the oven. Pour the batter into the molds, and since it should be quite thick, you can use a tablespoon or a small ladle to do this.
Step 6
Place the dish in the oven and bake for 20 minutes at 356°F.
Step 7
At this point, we start preparing the meringue. Carefully separate the egg whites from the yolks (this is one of the most important and fundamental steps for successful meringue), and pour the whites into the bowl where you will whip them. Turn on the mixer to full power and whip for a couple of minutes (if everything is going as it should, this time will be sufficient) until the mixture reaches a consistency that will remain still if you tilt the bowl. Then, add the 150 grams of sugar along with the vanilla sugar and whip for another couple of minutes.
Step 8
After 20 minutes, take out the almost finished cupcakes and remove them from the pan. You can take a baking sheet and line it with parchment paper, then arrange the cupcakes on it, which will now be decorated with meringue and berries.
Step 9
Take a pastry bag or piping syringe and pipe the meringue on top of the cupcakes, then decorate with berries.
Step 10
Lower the oven temperature to 248°F and place the baking tray with the meringue inside for 10-15 minutes, allowing it to form a light crust while keeping the berries fresh and not cooked.
