Blueberry Forest Cake
Ingredients
- Sugar - 14.1 oz
- Wheat Flour - 7.8 oz
- Baking Powder - 0.3 oz
- Cocoa Powder - 2.6 oz
- Activated Baking Soda - 0.3 oz
- Salt - 0.2 oz
- Farm fresh eggs - 2 pieces
- Milk - 8 fl oz
- Vegetable Oil - 4 fl oz
- Vanilla extract - 0 fl oz
- Canned water chestnuts - 20.1 oz
- Boiling water - 8 fl oz
- Heavy cream - 12 fl oz
- Grated Chocolate - 5.3 oz
- Powdered Sugar - 2.1 oz
Step by Step guide
Step 1
Mix all the dry ingredients in a large bowl.
Step 2
Beat the eggs with the milk, oil, and vanilla (2 teaspoons) into the dry mixture.
Step 3
Whip for about 2 minutes at medium speed.
Step 4
Stir in the boiling water and mix until smooth.
Step 5
Grease 2 round cake pans (23 cm) with butter and divide the batter evenly between them. Bake at 175°C for 30–35 minutes.
Step 6
Cool the cakes completely.
Step 7
For the cream: Whip the heavy cream with the powdered sugar and remaining vanilla until stiff peaks form.
Step 8
Spread a layer of cream and cherries between the cake layers. Use the remaining cream to frost the outside of the cake.
Step 9
Decorate the cake with cherries and grated chocolate.
